Andalusian cuisine already used honey, almonds, and other nuts as raw materials for their nutritional and energy contributions.
With this Hispanic-Arabic heritage, modern-day marzipan is associated with the Toledo convent of San Clemente, where it is said that the nuns prepared a sweet with almonds and sugar back in the Middle Ages to feed the hungry people, following a shortage of wheat, with what little they had.
This is how we prepare each marzipan…
Once we have harvested the almonds, we blanch them, peel them, and grind them.
To this paste, we add just the right amount of whole cane sugar (instead of refined white sugar) and agave syrup (instead of honey), mix and knead very well.
Then we put it in the oven… and the magic happens as it rises with the heat.
